It seems that both chefs and food manufacturers are poised to cater to people with food allergies this next year. Two recent surveys were done that show us food allergies are going to be an important and key trend for 2010.
The National Restaurant Association conducted an Internet survey of 1,854 professional chefs – members of the American Culinary Federation – in October 2009. Chefs were given a list of 214 food items, beverage items, culinary themes and preparation methods, and were asked to rate items as a “hot trend,” “yesterday’s news” or “perennial favorite” on restaurant menus in 2010. They ranked Gluten-free/food allergy conscious #9 of the top 150 trends , with a whopping 74% of the chefs ranking this as a “hot” trend. Their #7 ranking is Food with Benefits℠. Call it what you will—nutritional, healthful, good-for-you—but this trend toward beneficial foods is growing at a pretty big rate.
