Garlicy Ginger Kale

Kale_1This tasty, and nutritionally rich vegetable can be made in 5 minutes!

Kale is considered to be a highly nutritious vegetable with powerful antioxidant properties and is anti-inflammatory.

NO: gluten, dairy, soy, egg, peanut, tree nut, fish, shellfish

Garlic Ginger Kale

Ingredients:
¼ C              Chicken broth
2 cloves     Garlic, minced
1 t                  Fresh ginger, grated
2 bunches  Curly kale, deveined and coarsely chopped
1/4 C            Roasted pine nuts
1 T                 Oil (coconut or canola)
Salt and pepper to taste

Directions:
1. Heat broth in a non-stick skillet. Add garlic and ginger; sauté briefly to brown.
2. Lay kale on top of sautéed garlic/ginger.
3. Cover and cook over medium low heat for 5 minutes.
4. Remove pan from the heat.
5. Add roasted pine nuts and coconut oil. Sprinkle with salt, pepper, toss in the pan.
6. Serve immediately.

Yield: 4 servings
